Homemade Walnut-Oat Cookies


Super easy recipe for anyone! Thanks to my cousin, Rachael, for providing me this recipe.

Ingredients:
All purpose flour - 1.5 cups
Quick cooking rolled oats - 1/2 cup
Baking soda - 1/2 tsp Salt - 1/2 tsp
Sugar - 1/3 cup
Dried cranberries - 1/4 cup
Chocolate chips - 1/2 cup
Walnuts (or pecans etc), chopped - 1/2 cup
Softened butter - 3/4 cup
Large egg - 1 Vanilla - 1 tsp

Baking is never exact. This is just rough estimates of what to use!!! If you want less fat, cut the butter etc. :)

1. Mix butter, egg, & vanilla in a bowl until fluffy
2. Add the rest in the same bowl
3. Mix until well combined
4. Make balls of the dough onto a greased/buttered baking sheet. I used a tablespoon for large cookies and broke the large cookies in half for smaller ones. (Optional - squish the cookie down with a fork to make flat)
5. Bake in 350°F for ~15-20 minutes until edges start to brown 6. Cool on cookie sheet then move to wire rack to cool. (FYI its soft still when you pull them out of the oven)
7. Cookie + eating = party in your mouth! Enjoy!! This makes about 20 large cookies or 30-40 small cookies.
